In honor of National Pi Day (3.14 on 3/14, get it?), I thought I would celebrate with my favorite type of Pi. Being the literate, and non-mathematical, type of person that I am, my favorite type of Pi does not involve math. No, my favorite type of Pi is spelled “Pie” and it involves eggs, crust, sweetened condensed milk and a big swig of key lime juice, all mixed to a magical perfection and topped with a slice of lime and a dusting of powdered sugar. Whipped cream and fruity sauces are completely optional.
Here is one of the best pieces of pie since, well, sliced pie. This is Margaritaville Orlando’s version and I must say that it is pretty darn good. It is served atop drizzles of raspberry and mango sauce and dusted with powdered sugar.
In case you’re wondering, yes, key lime pie is yellow. If you are ever served green key lime pie, it is not real key lime pie. I actually make a pretty mean key lime pie, and I will share that recipe very soon. I use real key lime juice from Kermit’s Key West Key Lime Shoppe in Key West. By the way, if you’re ever in Key West, give them a visit and try one of their frozen slices of key lime pie dipped in chocolate. Your taste buds will thank you.
Now I know all of you mathematicians and engineers out there deserve your Pi day. Why not have your Pi(e) and eat it too?
You better share this recipe soon. Key Lime Pie (the yellow kind with a graham cracker crust) is my favorite.
Thank you. I need that motivation! 🙂 My daughter is requesting one so I really need to get with it. Thanks for reading!
